This vegan recipe only takes around 25-30 minutes. These cookies could work well as an easy breakfast on-the-go if paired with a yoghurt pot and a banana. Or why not, as a snacks with a cup of tea.
Equipment
- 1 bowl
- 1 spoon
- 1 baking tray
- parchment paper
- 1 cooking scale
Ingredients
- 150 g plain flour
- 50 g oats rolled
- 50 g sugar
- 2 Tbsp mixed seeds linen, sesame, sunflower or pumpkin
- 50 g chocolate chips
- 1 tsp baking powder
- 60 ml coconut oil melted
- 50 ml soy milk or other dairy-free drinks
Instructions
- Preheat the oven to 180°C.
- Mix all the dry ingredients: oats, flour, sugar, seeds and baking powder.
- Add coconut oil and milk. Mix well until combined.
- Add the chocolate chips and keep mixing.
- Line a baking tray with parchment paper, spoon over the mixture and shape with your hands.
- Bake for 15-20 minutes (check halfway through cooking).

Notes
You can substitute chocolate chips with fresh fruit such as raspberries or cherries.
For a gluten-free option, swap the flour for buckwheat flour and check that all the other ingredients you are going to use are gluten-free certified.
